3/4 tsp ground cardamom
1/2 tsp salt
1/2 tsp ground pepper
4 skinless, boneless, chicken breasts halves
2 tsp olive oil
1/2 medium fresh pineapple - peeled, cored and chopped into bite size piece
1/2 medium red sweet pepper - finely chopped
2 tbsp snipped fresh cilantro or parsley
2 tbsp lime juice
2 tbsp sliced green onion
1 jalapeno chile pepper - seeded and finely chopped
- In small bow, combine 1/2 tsp cardamom, salt & pepper. Rub both sides of chicken with oil; sprinkle evenly with spice mixture
- Grill chicken on rack of uncovered grill directly over medium heat for 12-15 minutes
- For relish, in medium bowl, combine pineapple, sweet pepper, cilantro, lime juice, green onion, jalapeno pepper and the remaining 1/2 tsp of cardamom. Mix.
- Serve chicken with relish
228 cal, 5 g fat, 373 mg sodium, 12 g carb, 2 g fiber, 34 g protein (I don't see how the protein could be this high but I digress)

Sounds great, I'm also on a making chicken more interesting quest, will give this a go.
I'm liking the sound of this recipe manda. Since starting to change my way of eating, i too, have made greater use of the herbs and spice rack in the house, as the added zing of flavour can make even the blandest veggie more interesting.
Yum!! That sounds really really good! As far as the Cardamom goes...not sure if you are near a World Market...they normally have some there.. ground and around the $2.99 mark I think!! I got a new cookbook last night! Eating Well After Weight Loss surgery. It looks interesting! Perhaps I will post a few recipes soon!
This sounds awesome! I actually have some cardamom from some christmas cookie I baked last year. I'll let you know how it tastes! Another place to check for spices is Whole Foods - in mine it's in the area with health and beauty stuff - they have spices you can buy in bulk - so you can literally grab like 1 T of what you need...
